Only ones I can think of are that Heather McKay who went unbeaten in squash for about 25 years, Herb Elliott who dominated and never lost over 1500m in his career (although he did only run competitively for about 5 years I think) and possibly Wayne Gretzky who owns something like 30-40 individual records in Ice Hockey and also won the league MVP 9 times including 8 straight.
